What We Source
We travel to the producers ourselves and rebuild what we find there using techniques drawn from around the world. Every dish is set against a drink from the same soil.

Ozaki Beef Served in JAL first class and at starred restaurants. Only 20 head reach the market at a time. -
Fish from Misaki Port Landed at the tip of the Miura Peninsula and sent straight to us — close enough to arrive at its best. -
Vegetables from Aoki Farm From the same peninsula. Our staff visit the fields themselves. -
Japanese craft drinks Sake, craft beer and tea, chosen after visiting the breweries and growers.
